Preheat oven to 325 degrees F. Combine ingredients for crust and press into bottom of spring form pan. Bake for 8-10 minutes until beginning to brown. Remove and set aside to cool. Beat room temperature cream cheese until fluffy. Add other ingredients, continuously, scrape the bowl one last time and beat one minute.
Wrap the sides and bottom of pan in tin foil. Pour filling mixture over crust in pan. Place it in a baking pan and pour boiling water into the baking pan so that the spring form pan is surrounded. Bake at 350° for 60 – 90 minutes. Check often. Cake is done when it is slightly soft in the center but firm to the touch.
Prepare berry topping by chopping berries and adding Xylitol or Stevia. Keep topping separate until ready to serve. When ready to serve, divide cheese cake into 12 slices, serve with 2 tablespoons of berry mixture topping.

How to Make:
Grease spring form pan or 10 inch round cake pan. Line the bottom of the pan with parchment. Heat oven to 325 degrees F. Whisk egg yolks until light in color. Beat the rest of the ingredients except egg whites, ending with the almond meal (batter will be very stiff). Beat egg whites until it forms a soft peak. Combine one third of the egg whites with the rest of the mixture, it will loosen it up. Fold the rest of the egg whites in and put in greased pan. Bake for 30 minutes until toothpick comes out clean. Let the cake cool completely in pan.
